2 Tbsp fresh cilantro, minced
3 Tbsp fresh lime juice
2 Tbsp extra virgin olive oil
4 boneless, skinless chicken breasts
For the Salsa:
3 Roma Tomatoes, diced
1/2 Red onion, diced
2 Tsp fresh lime juice
1/4 tsp of freshly ground black pepper
1 Avocado, diced
1 tbsp Cilantro, minced
1. Combine the cilantro, lime juice, olive oil, and chicken in a large bowl, leave to marinate in the fridge for twenty minutes.
2. Grill chicken over high heat
3. Combine salsa ingredients together and mix well, serve over top of chicken and enjoy!
