
Recently I was fortunate to take a Cajun Cooking class with Chef Dave Omar of Zinc Restaurant. We started, of course, by making our own Cajun spice, a wonderful blend of paprika, black pepper, oregano, coarse sea salt, demerara brown sugar and as much cayenne pepper as you can handle.
We made Bacon Cajun Shrimp, Blackened Chicken, Seasoned Rice and Bananas Foster with none other than Southern Comfort. The entire class was hands-on from prepping to cooking, cleaning and devouring. We even had left overs!
Chef Omar was generous with his recipes and tricks of his trade. I highly encourage everyone I know to take a cooking class. There are a plethora of classes available in the Edmonton Area.
