BAKED AVOCADO WITH EGG
- 2 avocados, pitted and some flesh scooped out
- 2 large organic eggs
- salt and pepper to taste
- herbs for garnish (basil, chives or parsley)
- Preheat oven to 400°.
- Slice avocados, pit them and scoop out a bit of flesh from around the sides.
- Crack one egg into each avocado and top with salt and pepper.
- Place on a cookie sheet with parchment paper.
- Bake for 15 min. or until the egg is set and fully cooked.
- Garnish with herbs and enjoy.
